Favorite Recipes

Hey everyone. I totally forgot that it was Thursday, so I'm sorry for any confusion that I may have caused. This is the post that I would like you to post your favorite Fit In Six recipes on.
To get it started, here is one of my favorites!
Parmesan Potatoes
Red Potatoes - as many or as few as you would like
Spray Butter
Parmesan Cheese

Wash your potatoes and cut them in half. Spray the flat side with spray butter and then dip them butter side down into parmesan cheese. Place potates on a cookie sheet and bake in the oven for 30-45 minutes on 350 degrees. Then enjoy! It's super nummy, low in fat, and red potatoes count as a veggie!

My current favorite meal is chicken-broccli-pasta. It calls fo 8 oz whole wheat pasta, 2 heads of broccli, 2-3 chicken breasts, 1/4 C olive oil, 1 tomato, 1tsp crushed red peppers and parmesan cheese. Cook the heads of broccli with the pasta until tender. At the same time, cut chicken into chuncks and saute with chicken, tomatoes, olive oil and red peppers. Then toss chicken mix with the pasta and broccli and top with parm. cheese. Yummy!

One that I make for my family that they love and I love too is Wheat Pizza (in fact we had it last night!)

Dough: 1 TBS yeast, 4 tsp sugar, 2 1/2 cups of flour (i put in about 3/4 cup of white flour instead so it's not soooo heavy), 1 C warm water, 2 TBS oil. Dissolve yeast into water, stir in other ingredients, knead, let rest 5 minutes before pressing into pan.

Toppings: pizza sauce (can make your own or buy lower fat version), mozzerella cheese, chicken, spinach, tomatoes, green peppers, olives, onions, etc. Bake at 425 degrees for 20-25 minutes.

My daughter thinks we're having "real" pizza and everyone is happy!!

Here is a recipe that I really like. I love meatloaf, but don't eat red meat much anymore, so this is a good alternative.

1 sm onion chopped
1 lb extra -lean ground turkey
2 lg egg whites (or one whole egg)
1 tsp Italian sesoning
1/4 tsp red pepper flakes (opt)
1/2 cup applesauce, unsweetened
1/2 tsp salt
1/2 cup dry unseasoned bread crumbs
2 Tbs grated parmesan cheese

mix that all together (with your hands is easiest) then form into 4 equal-sized loaves and arrange in dish. Pour 1 cup of spaghetti sauce over top and bake at 350 for 60 minutes. Serve with baked sweet potatoes.

One of our favorites is Chicken Tacos:

1/2 red bell pepper, diced
1/2 green bell pepper, diced
1/2 to 1 pound chicken, cooked and cubed
1 cup black beans
1 cup corn
1 can diced green chiles
1 cup cooked brown or wild rice (or more if you want!)

Saute the bell peppers in a little olive oil and then stir in the cooked chicken and other remaining ingredients and heat through. Serve on whole wheat tortillas with lettuce, fat-free cheese, fat-free sour cream and salsa. Yummy!

There are two that I like and they are REALLY simple. First of all, I make a banana milkshake. It is one scoop of protein powder, 8 oz. milk, and one banana. It is a fruit, a protein and a dairy in one!

I also like breakfast burritos with eggs, whole wheat tortillas, and tomatoes and salsa. It is good and, once again, counts for a bunch!

Hi, I did post this on Thursday but obviously to the wrong spot, sorry! I have to say my favorite Fit in Six meal is probably a nice spaghetti dinner. I buy Golden Grain Whole Wheat Spaghetti, some lean ground beef or turkey. A can of spaghetti sauce with stewed italian tomatoes in it. Yummy!! I usually have green beans or steamed broccoli for another veggie and add some peaches and cottage cheese as a little side dish. You can always have salad with it as well. Anyway, this meal is easy, quick and very yummy even 2-3 days later!! Good luck to everyone!

These are some yummy recipe ideas, thanks. We have a favorite breakfast. Just fry an egg in a bit of olive oil sunnyside up, top with a slice of lowfat swiss cheese in the last minute so it melts. Place on a slice of whole grain toast sprayed with butter spray. serve with a glass of V8 fruit and veggie juice. I never get tired of this, it's fast and counts for one of everything. Plus it stays with you for a while instead of leaving you hungry in a few minutes.

I'll be honest, I completely forgot to post my recipe on Thursday, but I wanted to share it anyway. I got it from my mom who got it from my Uncle Andy

The nice thing about this recipe is you can change it around to suit you tastes. I've modified it for me.

Taco Soup

Ingredients

1 undrained can Kidney beans
1 undrained can black beans
1 undrained can pinto beans
(you can use whatever kind of beans you want really...I've done it with White beans before)
1 undrained can stewed tomatoes
1 undrained can corn
1 small onion chopped
1 lb ground turkey
1 pkg taco seasonings
1-2 cups water

*If you are trying to watch your sodium in take all of the canned goods can be bought low-sodium. Or the beans can be cooked in a crockpot where you control the amount of salt added. And here's a basic taco seasoning recipe you can modify as well

1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon salt*
1 teaspoon black pepper

Directions:
brown turkey with onions. Add all other ingredients, Mix and let simmer to blend flavors. Depending on how soup-like you want it you can add more or less water.

This recipe is designed to be eaten with cheese and Fritos, but they're not necessary. It's mostly a more mild chili. Black beans are high in fiber if you are finding it hard to get all your fiber in.
