Hi, this is Amy Stevens. This is my 3rd round of fit in six and doing great!! I have to say my favorite Fit in Six meal is probably a nice spaghetti dinner. I buy Golden Grain Whole Wheat Spaghetti, some lean ground beef or turkey. A can of spaghetti sauce with stewed italian tomatoes in it. Yummy!! I usually have green beans or steamed broccoli for another veggie and add some peaches and cottage cheese as a little side dish. You can always have salad with it as well. Anyway, this meal is easy, quick and very yummy even 2-3 days later!! Good luck to everyone!

My current favorite meal is chicken-broccli-pasta. It calls fo 8 oz whole wheat pasta, 2 heads of broccli, 2-3 chicken breasts, 1/4 C olive oil, 1 tomato, 1tsp crushed red peppers and parmesan cheese. Cook the heads of broccli with the pasta until tender. At the same time, cut chicken into chuncks and saute with chicken, tomatoes, olive oil and red peppers. Then toss chicken mix with the pasta and broccli and top with parm. cheese. Yummy!
